Baked Eggplant


  • 2 Double Diamond Baby Eggplants, sliced into 1/2-inch-thick-rounds
  • 2 Double Diamond Beefsteak Tomatoes, diced
  • 3 fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp extra virgin olive oil
  • 1 tsp oregano
  • Salt and pepper to taste


  1. Preheat oven to 400°F.
  2. Lightly grease a baking sheet.
  3. Arrange eggplant on the baking sheet and spoon tomatoes on top of each eggplant piece.
  4. Drizzle olive oil, salt and pepper and oregano over mixture.
  5. Sprinkle Parmesan cheese on top.
  6. Bake in oven for 30 minutes or until the cheese is golden brown.
  7. Switch oven to broiler and continue baking until cheese is browned to your liking; about 5 minutes.
  8. Garnish with fresh basil.
  9. Serve & enjoy!
