Ingredients
- 4lbs Double Diamond Tomatoes on the Vine, peeled and chopped (to peel, cut a small “x” on the top and drop in to boiling water for 30 seconds and drop in to an ice bath. Skin will easily peel off)
- 1lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 tbsp dried basil
- 1 tbsp dried parsley
- 1 tbsp dried oregano
- 1 teaspoon sea salt
- 2 cups water
- Freshly grated parmesan cheese
Instructions
- Heat half the olive oil in a large skillet over medium heat
- Add the ground beef and begin browning. When it is almost browned, drain and put in a bowl.
- In the same skillet, add the remaining oil and sauté the chopped onion and minced garlic.
- Once the onions are translucent add the beef and finish browning.
- Add tomatoes, herbs, water and salt. Bring to a boil.
- Reduce heat and simmer, stirring occasionally, until sauce thickens, approx. 1 hour.
- Sprinkle cheese on top.
